SpudCraft does one thing, and does it properly: a big Maine potato, baked until the skin crackles, then loaded until you need a fork and a plan.

The potato is the point.
A loaded baked potato, a “jacket potato” if you've had one in the UK, is a proper meal built on top of a whole baked potato. Split it, fluff the inside, then load it until the potato is the smallest thing on the plate.
That only works if the potato underneath is good. Ours are Maine potatoes, baked until the skin goes crisp and the inside collapses into steam the second you break it open. It's the part customers write about most, and it's the part we refuse to rush.
Then it gets loaded. Steak. Smoked Brookwood Farms brisket. Chili. Street corn. Crispy onions. Guacamole. And the garlic sauce that shows up in more reviews than anything else on the menu.

A truck that follows the season.
Summer, we're at 1 Old Orchard St in Old Orchard Beach, a short walk from the sand and the pier. It's a town built on eating something hot while standing up. As it happens, that is exactly what a loaded spud is for.
Once the beach empties out after Labor Day we move to 26 Marginal Way in Portland and keep going all winter. Same potatoes, same garlic sauce, warmer coat.
